Chinese Vegan Recipe Di San Xian - Stir Fried Eggplant, Potato and Pepper
Di San Xian means three treasures of the earth.
Di San Xian Chinese vegan sautéed potato eggplant dish is a very simple make and uses very less ingredients. Di san xian goes well with steamed rice.
Servings - 3
Ingredients:
2 tbsp light soy sauce
1/2 tsp brown sugar
1/2 tsp salt
1 tbsp dark soy sauce
3 tbsp cornstarch
1 tsp chilli flakes
4 tbsp water
Oil for frying
2 long eggplants
2 potatoes
1 green bell pepper
3 tbsp garlic cloves
1 red onion
Method:
Add light soy sauce, brown sugar, 1/4 teaspoon of salt, dark soy sauce, 1 tablespoon of cornstarch, chilli flakes, water, and mix well in a small bowl.
Add the eggplants and 1/4 teaspoon salt to a large bowl and mix well.
Add 2 tablespoons of cornstarch and coat the eggplants well.
Heat oil in a pan and add the potatoes.
Deep fry the potatoes until well cooked and remove.
Then add the eggplant to the hot oil, fry until well cooked and remove.
Remove the oil from the pan and leave around 1 tablespoon of oil in.
Now, add the garlic and sauté until aromatic.
Add onion and sauté, then add bell pepper and sauté for a minute.
Stir in the mixed sauce and cook for a minute.
Add in the fried potatoes and fried eggplant.
Mix and fry well until the vegetables are coated with sauce.
Serve hot with steamed rice.
